Choose the pace before the restaurant
For a first outing, an aperitif may suit you better than a long tasting menu. If you enjoy conversation, choose somewhere you do not have to raise your voice. If time is limited, pick an easy-to-reach venue and a realistic finishing time.
Tell the venue about any dietary or accessibility needs and check directly that it can accommodate them. A venue being described as elegant does not automatically mean it suits your requirements.
An elegant evening feels easier when you do not have to manage every surprise.
Agree on the practical details
Agree who makes the reservation, where to meet and how the restaurant bill will be handled. Dinner expenses and the fee for companionship are separate items to clarify in the proposal: do not assume one includes the other.
You can arrive independently and meet at the venue entrance. If plans involve further travel, agree on it beforehand. The evening does not need an undefined ending to be enjoyable.
Leave room for conversation
You do not need a list of questions. Start with the venue, a trip or something you read in his introduction. Notice how you feel during the conversation: a successful dinner can simply be pleasant time together, without further expectations.
